Honey Garlic Glazed Chicken Thighs with Roasted Carrots & Crispy Smashed Potatoes

There's something about October that makes me appreciate a good home-cooked dinner even more.

Maybe it's the cooler mornings finally starting to show up here in Phoenix.

Maybe it's football season.

Or maybe it's just that after a long summer, I'm ready for meals that feel a little more comforting.

Whatever the reason, this time of year always has me looking for recipes that are warm, satisfying, and full of flavor without requiring hours in the kitchen.

And this week's recipe checks all those boxes.

We're making Honey Garlic Glazed Chicken Thighs with Roasted Carrots & Crispy Smashed Potatoes.

The chicken gets beautifully browned in a skillet, then coated in a sticky honey garlic glaze with coconut aminos, fresh garlic, and a splash of apple cider vinegar.

We're pairing it with roasted carrots that develop those naturally sweet, caramelized edges and crispy smashed potatoes seasoned with garlic and rosemary.

It's the kind of dinner that feels like you put in a lot more effort than you actually did.

And, of course, it's completely gluten-free and dairy-free.

Honey Garlic Glazed Chicken Thighs

Prep Time: 15 minutes
Cook Time: 40–45 minutes
Total Time: Approximately 55–60 minutes
Serves: 4

For the Chicken

  • 2 pounds boneless, skinless chicken thighs

  • 1 tablespoon avocado oil

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¾ teaspoon sea salt

  • ½ teaspoon dried thyme

For the Honey Garlic Glaze

  • ¼ cup raw honey

  • ¼ cup coconut aminos

  • 2 tablespoons apple cider vinegar

  • 4 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon ground ginger

  • 2 tablespoons water

For the Crispy Smashed Potatoes

  • 1½ pounds baby Yukon Gold potatoes

  • 2 tablespoons olive or avocado oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried rosemary

  • ¾ teaspoon sea salt

  • Fresh parsley for finishing

For the Roasted Carrots

  • 1 pound carrots, peeled and cut into thick diagonal pieces

  • 1½ tablespoons olive oil

  • ½ teaspoon garlic powder

  • ½ teaspoon dried thyme

  • ½ teaspoon sea salt

  • 1 teaspoon honey, optional

Step 1: Get the Potatoes Started

Preheat your oven to 425°F.

Place the baby Yukon Gold potatoes into a large pot of salted water.

Bring to a boil and cook for approximately 15–20 minutes, or until the potatoes are fork-tender.

Drain them well and allow them to steam-dry for a couple of minutes.

This is important because excess moisture makes it harder to get those crispy edges.

Transfer the potatoes to a parchment-lined baking sheet.

Using the bottom of a glass or measuring cup, gently press each potato until it's flattened to approximately ½-inch thick.

Don't worry if some of the edges break apart.

Those rough, broken edges are exactly what we want.

They're the parts that get extra crispy in the oven.

Drizzle with olive oil and season with garlic powder, rosemary, and sea salt.

Roast for approximately 25–30 minutes, until the edges are golden brown and crispy.

Finish with fresh parsley.

Step 2: Roast the Carrots

While the potatoes are boiling, prepare the carrots.

Add the carrots to a mixing bowl with olive oil, garlic powder, thyme, and sea salt.

Toss until evenly coated.

Spread them onto a separate baking sheet in a single layer.

Roast at 425°F for approximately 25–30 minutes, turning halfway through.

We're looking for carrots that are tender in the middle with lightly caramelized edges.

If you'd like a little extra sweetness, drizzle with a teaspoon of honey during the final five minutes.

But honestly, when carrots are roasted properly, they develop plenty of natural sweetness on their own.

Step 3: Season the Chicken

Pat the chicken thighs dry with paper towels.

Combine the garlic powder, onion powder, sea salt, and dried thyme.

Season the chicken evenly on both sides.

Heat avocado oil in a large skillet over medium-high heat.

Once the oil is hot, add the chicken thighs in a single layer.

Cook for approximately 5–6 minutes on the first side, allowing a golden crust to develop.

Flip and cook for another 4–5 minutes, adjusting for thickness.

The chicken will finish cooking in the glaze, so don't worry if it isn't quite done yet.

Remove the chicken from the skillet and set aside.

Step 4: Make the Honey Garlic Glaze

Reduce the skillet heat to medium-low.

In a small bowl, whisk together:

  • Raw honey

  • Coconut aminos

  • Apple cider vinegar

  • Fresh garlic

  • Lemon juice

  • Ground ginger

  • Water

Pour the mixture into the skillet.

Use a wooden spoon to scrape up the browned bits left behind from cooking the chicken.

Those little bits add a tremendous amount of flavor.

Bring the glaze to a gentle simmer.

Allow it to reduce for approximately 3–5 minutes, stirring occasionally.

As the honey reduces, the sauce will become slightly thicker and glossier.

You don't need a thick, syrupy barbecue sauce.

We're looking for a light glaze that coats the chicken.

Step 5: Finish the Chicken

Return the chicken thighs to the skillet.

Turn each piece in the glaze until evenly coated.

Allow everything to simmer gently for another 3–5 minutes, or until the chicken reaches an internal temperature of 165°F.

Spoon some of the glaze over the chicken as it cooks.

Once finished, remove the skillet from the heat.

Let the chicken rest for a few minutes before serving.

The result is tender, juicy chicken with golden edges and a sweet, savory garlic glaze.

Step 6: Build Your Plate

Start with a few crispy smashed potatoes.

Add a generous serving of roasted carrots.

Place one or two glazed chicken thighs alongside.

Spoon a little extra honey garlic glaze over the chicken.

Finish with fresh parsley.

That's it.

A simple, colorful fall dinner with a great combination of textures.

Crispy potatoes.

Tender chicken.

Caramelized carrots.

And just enough sticky glaze to bring everything together.

The Secret to Crispy Smashed Potatoes

If you've never made smashed potatoes before, you're missing out.

They're somewhere between roasted potatoes and French fries.

Soft and fluffy on the inside.

Golden and crispy on the outside.

And the best part?

You don't need a deep fryer.

The trick is to boil them first, let them dry, and then smash them before roasting.

When you flatten the potatoes, you create more surface area for the oil and heat to work their magic.

And those little broken edges?

That's where the good stuff happens.

Just make sure you give the potatoes enough space on the sheet pan.

Crowding them together creates steam instead of crispiness.

Why Honey Garlic Works So Well

Honey garlic is one of those flavor combinations that almost everyone can get behind.

The honey adds sweetness.

The garlic brings a bold, savory flavor.

Coconut aminos adds depth.

And the apple cider vinegar and lemon juice balance everything with a little acidity.

It's a simple combination, but it creates a sauce that tastes much more complex than the ingredient list suggests.

The key is balance.

We don't want the chicken swimming in sauce.

We just want enough glaze to lightly coat each piece.

That way, you still get those beautiful browned edges from the skillet.

Make It AIP-Friendly

This recipe is easy to modify for the elimination phase of the Autoimmune Protocol.

The chicken and honey garlic glaze are already made with AIP-friendly ingredients, assuming your coconut aminos contain compliant ingredients.

For the sides:

  • Replace the Yukon Gold potatoes with white sweet potatoes or another AIP-compliant root vegetable.

  • Keep the roasted carrots as written.

  • Use compliant seasonings and cooking oils.

White potatoes are nightshades, so they aren't included during the elimination phase of AIP.

White sweet potatoes are a great substitute because they have a more savory flavor than orange sweet potatoes and roast beautifully.

Make It Work for the Kids

This is one of those meals that's naturally easy to serve family-style.

Put everything on the table separately.

Chicken.

Potatoes.

Carrots.

Extra glaze.

Some kids will love the sticky honey garlic chicken.

Others might prefer their chicken without sauce.

If that's the case, simply set aside a portion of the chicken before adding the glaze and finish cooking it separately.

And the smashed potatoes?

Those usually don't need much convincing. 😂

Let everyone build their own plate.

You get one dinner for the whole family without having to cook multiple meals.

Meal Prep Tips

This recipe works well for meal prep, but there are a few things worth keeping in mind.

For the chicken: Store it with a little extra glaze to help keep it moist. Reheat gently in a covered skillet or microwave until heated through.

For the potatoes: Keep them separate from the chicken and glaze. Reheat in an oven or air fryer to bring back some of those crispy edges.

For the carrots: These reheat beautifully and can also be served cold over salads.

If you want to prep ahead, you can boil the potatoes and mix the glaze the day before.

Then all you need to do is roast the vegetables, sear the chicken, and bring everything together.

Store cooked leftovers in the refrigerator and enjoy within 3–4 days.

Fall Comfort Food Can Be Simple

I think sometimes we make dinner more complicated than it needs to be.

We assume that if something tastes really good, it must require a long ingredient list, expensive ingredients, or a complicated cooking process.

But that's rarely the case.

Sometimes it's just about taking familiar foods and preparing them a little differently.

Chicken thighs become something special with a simple honey garlic glaze.

Baby potatoes turn into crispy, golden bites with a quick smash and a hot oven.

And carrots develop incredible flavor with nothing more than olive oil, garlic, herbs, and a little time in the oven.

These Honey Garlic Glazed Chicken Thighs with Roasted Carrots & Crispy Smashed Potatoes are exactly the kind of dinner I love this time of year.

Warm.

Comforting.

Full of flavor.

And made with real ingredients that the whole family can enjoy.

Because eating well shouldn't mean spending your entire evening in the kitchen.

Sometimes the simplest meals are the ones everyone asks you to make again.

Happy cooking!
