There's something about the last week of October that feels a little different.
The mornings are finally getting cooler here in Phoenix, the calendar is filling up with school activities and Halloween events, and somehow the weeks seem to be moving faster than ever.
And when life gets busy, dinner is usually one of the first things that becomes complicated.
That's why I love meals that bring everything together in one skillet.
Something warm.
Something comforting.
Something that feels like a real homemade dinner without spending the entire evening in the kitchen.
This week's Wednesday Whip-Up is Creamy Harvest Chicken & Wild Rice Skillet with Mushrooms, Spinach & Fresh Herbs.
We're combining golden-seared chicken, earthy mushrooms, tender wild rice, fresh spinach, garlic, thyme, and rosemary in a light, creamy sauce made with coconut milk and chicken broth.
It's rich and savory without using butter, heavy cream, or cheese.
And because we're using simple, whole-food ingredients, it's completely gluten-free and dairy-free.
Let's get cooking!

1½ tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon onion powder
¾ teaspoon sea salt
½ teaspoon dried thyme
For the Harvest Skillet
2 cups cooked wild rice or wild rice blend (use certified gluten-free if needed)

2 cups fresh baby spinach
1 tablespoon olive oil
1 cup chicken bone broth
¾ cup full-fat coconut milk
1 teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon rubbed sage
½ teaspoon sea salt, plus more to taste
1 tablespoon fresh lemon juice
1 teaspoon arrowroot starch mixed with 1 tablespoon cold water, optional
For Finishing
Fresh chopped parsley
Fresh thyme
Lemon wedges, optional
Step 1: Get Your Wild Rice Ready
If you're starting with uncooked wild rice, prepare it according to the package instructions.
Wild rice typically takes longer to cook than regular white rice, so this is one ingredient I recommend making ahead of time.
You'll need approximately 2 cups cooked wild rice for this recipe.
If you're using a wild rice blend, check the cooking instructions since the timing can vary depending on the grains included.
Once cooked, fluff the rice and set it aside.
Meal prep tip: Cook a larger batch of wild rice at the beginning of the week and use it for salads, bowls, or another easy dinner.
Step 2: Season and Sear the Chicken
Pat the chicken thighs dry with paper towels.
Cut them into evenly sized pieces and season with garlic powder, onion powder, sea salt, and dried thyme.
Heat 1½ tablespoons of olive oil in a large skillet over medium-high heat.
Add the chicken in a single layer, working in batches if necessary.
Let it cook undisturbed for approximately 3–4 minutes so it develops a nice golden crust.
Turn the pieces and continue cooking until browned and cooked through, reaching an internal temperature of 165°F.
Transfer the chicken to a plate and set aside.
Don't worry about the browned bits left in the skillet.
We're going to use those to build the sauce.
Step 3: Build the Flavor with Mushrooms and Garlic
Reduce the heat to medium.
Add another tablespoon of olive oil to the skillet.
Add the sliced mushrooms and spread them into an even layer.
Let them cook for 3–4 minutes without stirring too much.
This allows the mushrooms to develop some golden edges instead of simply steaming.
Once they've started to brown, add the diced onion.
Cook for another 3–4 minutes until softened.
Then add the minced garlic and cook for about 30 seconds.
At this point, your kitchen should be smelling pretty incredible.
Step 4: Make the Creamy Herb Sauce
Pour the chicken broth into the skillet.
Use a wooden spoon to scrape up the browned bits from the bottom.
Add the coconut milk, thyme, rosemary, sage, and sea salt.
Stir everything together and bring to a gentle simmer.
Let the sauce cook for approximately 4–5 minutes.
The coconut milk adds richness, while the broth keeps the sauce from becoming too heavy.
If you'd like a slightly thicker consistency, stir in the arrowroot slurry and allow it to simmer briefly.
We're looking for a light, creamy sauce that coats the chicken and rice.
Not a thick gravy.
Step 5: Bring Everything Together
Add the cooked wild rice to the skillet and stir until evenly coated in the creamy herb sauce.
Return the chicken and any juices from the plate to the skillet.
Stir everything together and let it warm through for approximately 2–3 minutes.
Add the fresh spinach and gently fold it into the mixture.
The spinach will wilt quickly, adding a little freshness and color.
Finish with the fresh lemon juice.
Taste and adjust the salt if needed.
That final splash of lemon helps brighten the garlic and herbs while balancing the richness of the coconut milk.
Step 6: Serve It Up
Spoon the creamy chicken and wild rice mixture into shallow bowls.
Finish with fresh parsley or thyme.
Add a squeeze of lemon if you'd like a little extra brightness.
That's it.
One warm, hearty skillet dinner that's perfect for a busy fall evening.
And the best part?
You don't need a bunch of separate side dishes to make it feel like a complete meal.
Why Wild Rice Works So Well in Fall Recipes
Wild rice has a slightly nutty flavor and a firmer, chewier texture than traditional white rice.
That makes it a great match for ingredients like mushrooms, garlic, thyme, rosemary, and sage.
And unlike some grains that become overly soft in creamy sauces, wild rice tends to hold its texture.
It also adds a nice contrast to the tender chicken and creamy sauce.
One thing worth mentioning: wild rice isn't actually the same plant as traditional white or brown rice.
It's the seed of an aquatic grass, and it's naturally gluten-free.
Just be sure to check packaged blends for other ingredients if you're cooking for someone with gluten sensitivities.
The Secret to a Good Dairy-Free Cream Sauce
We've talked about this before, but it's worth repeating.
You don't need heavy cream to make a rich, comforting dinner.
Full-fat coconut milk is one of my favorite ingredients for creating dairy-free sauces.
But the key is balance.
Too much coconut milk can overpower the other flavors.
That's why we're combining it with chicken broth, garlic, herbs, and a splash of lemon.
The result is creamy without tasting like coconut.
And because the wild rice absorbs some of that sauce, everything comes together beautifully.
Make It Paleo or AIP-Friendly
Wild rice is naturally gluten-free, but it isn't Paleo or AIP elimination-phase compliant.
For a Paleo or AIP version, replace the wild rice with approximately 3 cups of cauliflower rice.
Cook the cauliflower rice separately in a skillet with a little olive oil until tender and most of its moisture has evaporated.
Then fold it into the sauce.
The chicken, mushrooms, spinach, garlic, and herbs are generally compatible with AIP elimination when using compliant broth, coconut milk, and seasonings.
For AIP, make sure all packaged ingredients are compliant and omit any noncompliant additions.
The cauliflower rice version will be a little lighter, but you'll still get that warm, creamy, herb-packed comfort food we're looking for.
Make It Work for the Kids
One thing I've learned about family dinners is that sometimes the difference between a meal everyone enjoys and a dinner-table standoff is simply how you serve it.
Not every kid wants their chicken mixed into a creamy sauce with mushrooms and spinach.
And that's okay.
Before combining everything, set aside some plain cooked chicken and wild rice.
Then let everyone decide what they want to add.
Maybe someone wants just chicken and rice.
Maybe someone loves the creamy sauce but isn't sold on mushrooms.
Maybe the spinach gets completely ignored. 😂
The goal isn't to make everyone eat an identical bowl.
It's to make one dinner that can work for the whole family.
Meal Prep Tips
This is a great recipe to make ahead, especially during a busy week.
The chicken and wild rice hold up well in the refrigerator, and the flavors of the garlic and herbs continue to develop.
Store leftovers in airtight containers and refrigerate promptly for up to 3–4 days.
When reheating, add a splash of chicken broth or coconut milk.
The wild rice will absorb some of the sauce as it sits, so that extra liquid helps bring everything back to a creamy consistency.
Reheat until steaming hot throughout, ideally to 165°F.
You can also prepare the rice and chop the vegetables ahead of time to make dinner even faster.
A Little Comfort in the Middle of a Busy Week
As we head into the final days of October, I know how quickly the calendar can fill up.
School activities.
Halloween events.
Work.
Family commitments.
And everything else that seems to happen all at once.
Sometimes the best thing you can do is keep dinner simple.
Not because you're cutting corners.
But because a good meal doesn't have to be complicated.
This Creamy Harvest Chicken & Wild Rice Skillet brings together everything I love about fall cooking.
Warm, savory herbs.
Tender chicken.
Earthy mushrooms.
A creamy sauce.
And a meal that brings everyone around the table without requiring a sink full of dishes.
It's gluten-free, dairy-free, and full of real ingredients.
And on a busy October evening, that's exactly the kind of dinner I want to make.
Happy cooking!
