There's something about October that makes me want to spend a little more time in the kitchen.
Not necessarily hours.
And definitely not washing a mountain of dishes afterward. 😂
But there's something about a warm, home-cooked dinner with crispy potatoes, savory herbs, and a really good pan sauce that just feels right this time of year.
Here in Phoenix, we're finally starting to get those glimpses of cooler weather.
And after a long Arizona summer, I'll take every bit of it.
This week, we're making Crispy Apple Cider Glazed Pork Chops with Roasted Garlic Potatoes & Warm Bacon Green Beans.
We're talking juicy, golden-seared pork chops finished in a sweet and tangy apple cider glaze, crispy roasted potatoes with garlic and rosemary, and fresh green beans tossed with smoky bacon.
It's savory, a little sweet, and packed with those familiar fall flavors.
And the best part?
No gluten. No dairy. No complicated ingredients.
Just a really good dinner.

Crispy Apple Cider Glazed Pork Chops
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: Approximately 45 minutes
Serves: 4
For the Pork Chops
4 boneless pork chops, approximately 6 oz each, preferably ¾–1 inch thick
2 tablespoons avocado oil
1 teaspoon garlic powder
1 teaspoon dried thyme
½ teaspoon onion powder
¾ teaspoon sea salt
¼ teaspoon black pepper, optional
For the Apple Cider Glaze
¾ cup unsweetened apple cider
2 tablespoons apple cider vinegar
2 tablespoons raw honey
1 tablespoon coconut aminos
2 cloves garlic, minced
½ teaspoon dried rosemary
½ teaspoon dried thyme
Pinch of sea salt
For the Roasted Garlic Potatoes
1½ pounds baby Yukon Gold potatoes, halved
2 tablespoons olive or avocado oil
4 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried thyme
¾ teaspoon sea salt
2 tablespoons fresh parsley, chopped
For the Warm Bacon Green Beans
1 pound fresh green beans, trimmed
4 slices uncured bacon, chopped
2 cloves garlic, minced
1 tablespoon olive oil, if needed
1 tablespoon fresh lemon juice
¼ teaspoon sea salt, or to taste
Step 1: Start With the Crispy Potatoes
Preheat your oven to 425°F.
Add the halved Yukon Gold potatoes to a large mixing bowl.
Drizzle with olive oil and season with rosemary, thyme, and sea salt.
Toss everything together until the potatoes are evenly coated.
Spread them onto a sheet pan, placing the cut sides down.
Here's the trick: Don't overcrowd the pan.
When potatoes have enough space, they roast.
When they're piled on top of each other, they steam.
And we're looking for those crispy, golden edges.
Roast for approximately 25–30 minutes, flipping once if needed.
During the final 5 minutes, add the minced garlic and toss gently so it cooks without burning.
Finish with fresh parsley.
Simple, crispy, and honestly pretty difficult not to eat straight off the pan.
Step 2: Season the Pork Chops
While the potatoes are roasting, pat your pork chops dry with paper towels.
This is one of those small steps that makes a big difference.
Moisture on the outside of the meat prevents it from developing that beautiful golden crust.
Combine the garlic powder, thyme, onion powder, sea salt, and black pepper if using.
Season both sides of the pork chops.
Let them sit at room temperature for about 10 minutes while you prepare the glaze ingredients.
Step 3: Get a Good Sear
Heat the avocado oil in a large skillet over medium-high heat.
Once the oil is hot, add the pork chops.
Let them cook undisturbed for approximately 3–4 minutes per side, depending on thickness.
We're looking for a deep golden crust.
Avoid constantly flipping or moving them around.
Once browned, transfer them to a plate.
They'll finish cooking in the glaze.
Step 4: Make the Apple Cider Glaze
Reduce the skillet heat to medium.
Add the minced garlic and cook for about 30 seconds.
Then pour in:
Apple cider
Apple cider vinegar
Honey
Coconut aminos
Rosemary
Thyme
Sea salt
Use a wooden spoon to scrape up those browned bits from the bottom of the skillet.
That's flavor we definitely don't want to waste.
Bring everything to a gentle simmer.
Let the sauce reduce for approximately 5–7 minutes, until it becomes slightly syrupy.
You don't want a thick barbecue sauce.
Just a light, glossy glaze that coats the pork.
Step 5: Finish the Pork Chops
Return the pork chops to the skillet.
Spoon the apple cider glaze over each piece.
Continue cooking gently until the pork reaches an internal temperature of 145°F.
Transfer the pork to a clean plate and let it rest for at least 3 minutes.
The result should be tender, juicy pork with a beautiful caramelized exterior.
And that sweet and tangy glaze?
That's what brings everything together.
Step 6: Make the Warm Bacon Green Beans
While the pork rests, bring a pot of salted water to a boil.
Add the green beans and cook for approximately 3–4 minutes, until bright green and just tender.
Drain and set aside.
In a separate skillet, cook the chopped bacon over medium heat until crispy.
Remove the bacon and leave about 1 tablespoon of rendered fat in the skillet.
Add the minced garlic and cook for 30 seconds.
Add the green beans and toss everything together.
Return the bacon to the skillet.
Finish with fresh lemon juice and a pinch of sea salt if needed.
You want the beans tender but still slightly crisp.
The smoky bacon, fresh garlic, and lemon make this side dish incredibly simple but full of flavor.
Build Your Plate
Start with a generous helping of crispy roasted garlic potatoes.
Add one golden apple cider glazed pork chop.
Spoon a little extra glaze over the pork.
Finish with a serving of warm bacon green beans.
Add fresh parsley or thyme if you have it.
That's dinner.
Nothing overly complicated.
Just a really good combination of sweet, savory, crispy, and fresh.
The Secret to Juicy Pork Chops
Pork chops have a reputation for being dry.
But most of the time, the problem isn't the pork.
It's overcooking.
Pork chops are relatively lean, especially boneless cuts.
They don't need to be cooked until they're completely white and tough.
For whole-cut pork, the safe internal temperature is 145°F followed by at least a 3-minute rest.
Using a meat thermometer takes the guesswork out of the process.
And because we're finishing these chops in a flavorful glaze, they stay moist and delicious.
Make It AIP-Friendly
This recipe is easy to adapt for the elimination phase of the Autoimmune Protocol.
Omit the black pepper.
Use compliant coconut aminos and bacon without noncompliant spices or additives.
Make sure the apple cider contains no added noncompliant ingredients.
Keep the potatoes, or substitute roasted sweet potatoes if preferred.
Important: White potatoes are nightshades and are not compliant with the AIP elimination phase. For a fully AIP-compliant plate, replace the Yukon Gold potatoes with sweet potatoes or another compliant root vegetable.
The pork, apple cider glaze, and green beans can all work with those simple adjustments.
Make It Work for the Kids
One of my favorite things about this meal is that it's easy to serve without making separate dinners.
Some kids might love the apple cider glaze.
Others might prefer their pork plain.
So before returning all the pork to the sauce, you can set aside a portion for anyone who prefers it without glaze. Just finish cooking that portion to 145°F and let it rest.
Serve everything separately:
Pork.
Potatoes.
Green beans.
A little glaze for dipping.
Maybe the potatoes disappear first.
Maybe someone decides bacon makes green beans acceptable. 😂
Whatever works.
The goal is to bring everyone around the same table without making dinner a battle.
Meal Prep Tips
This recipe also works well for meal prep.
Cook the pork chops and store them with a little extra glaze to help prevent them from drying out.
Keep the roasted potatoes and green beans in separate containers when possible.
When reheating, warm the pork gently in a covered skillet with a splash of broth or water.
For the potatoes, use an air fryer or oven to bring back those crispy edges.
And if you have leftover pork?
Slice it thin and serve it over mixed greens with apples, cucumbers, and a simple apple cider vinaigrette.
Completely different lunch.
Minimal extra work.
A Little Fall Flavor Goes a Long Way
One thing I've always loved about fall cooking is that it doesn't necessarily have to be complicated.
You don't need a dozen spices.
You don't need a heavy cream sauce.
And you definitely don't need to spend the entire evening in the kitchen.
Sometimes it's as simple as taking familiar ingredients and giving them a seasonal twist.
Pork chops become something special with a little apple cider, honey, garlic, and herbs.
Roasted potatoes get crispy and golden with a hot oven and a little patience.
And fresh green beans become a family favorite with garlic, bacon, and lemon.
These Crispy Apple Cider Glazed Pork Chops with Roasted Garlic Potatoes & Warm Bacon Green Beans are everything I love about a good fall dinner.
Warm.
Comforting.
Full of flavor.
And made with real ingredients that leave you feeling good afterward.
Because at the end of the day, eating well shouldn't mean giving up the foods that bring everyone together.
Happy cooking!
