The calendar says fall is getting closer.
Stores are filling up with pumpkins.
People in other parts of the country are starting to talk about sweaters and cool mornings.
And we're still walking outside into triple-digit heat. π
So I'm not quite ready to start making big pots of soup.
But I am ready for some of those flavors that remind us cooler days are eventually coming.
That's where this week's recipe comes in.
These Apple Cider Honey Chicken Bowls give us just enough fall flavor without becoming a heavy fall meal.
We're making juicy, golden chicken with a sticky apple cider and honey glaze, serving it alongside crispy roasted sweet potatoes, and balancing everything with a cold apple-herb slaw.

The potatoes bring a little comfort.
And the cold slaw keeps the whole plate crisp and fresh.

3 tablespoons honey
2 tablespoons coconut aminos
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
Β½ teaspoon grated fresh ginger
Pinch of sea salt
Optional Thickener
1 teaspoon tapioca starch
1 tablespoon cold water
π Crispy Herb Sweet Potatoes
2 large sweet potatoes, peeled and cut into ΒΎ-inch cubes
2 tablespoons avocado oil
1 teaspoon garlic powder
1 teaspoon dried thyme
Β½ teaspoon dried rosemary
ΒΎ teaspoon sea salt
π Crunchy Apple Herb Slaw
2 cups finely shredded green cabbage
1 crisp apple, cut into thin matchsticks
Β½ cup shredded carrots
ΒΌ cup thinly sliced red onion
2 tablespoons fresh parsley, chopped
For the Dressing
2 tablespoons extra-virgin olive oil
1Β½ tablespoons apple cider vinegar
1 tablespoon fresh lemon juice
1 teaspoon honey
Pinch of sea salt
Step 1: Get Those Sweet Potatoes Crispy
Preheat the oven to 425Β°F.
Add the cubed sweet potatoes to a large bowl with avocado oil, garlic powder, thyme, rosemary, and salt.
Toss until everything is evenly coated.
Spread the potatoes onto a sheet pan.
Here's the important part:
Give them some room.
If they're piled on top of each other, they'll steam.
If they have space, those edges get brown and caramelized.
Roast for 25β30 minutes, flipping about halfway through.
Step 2: Make the Apple Slaw
While the potatoes are roasting, combine the cabbage, apple, carrots, red onion, and parsley.
In a separate small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, honey, and salt.
Pour it over the slaw and toss.
Then put the whole thing in the refrigerator.
We want it cold and crunchy when it hits the plate.
A Quick Apple Tip
Once an apple is sliced, it wants to turn brown pretty quickly.
The lemon and vinegar in this dressing help prevent that, so toss your apples into the slaw shortly after cutting them.
For this recipe, I'd use something crisp and slightly tart like Honeycrisp, Pink Lady, or Granny Smith.
Step 3: Cook the Chicken
Pat the chicken dry.
Season both sides with garlic powder, onion powder, thyme, salt, and black pepper if using.
Heat the avocado oil in a large skillet over medium-high heat.
Add the chicken and let it cook without constantly moving it around.
For chicken thighs, you'll usually need about 5β7 minutes per side, depending on thickness.
Chicken breast cooking time will vary more depending on size.
Cook until the thickest portion reaches 165Β°F.
Transfer the chicken to a plate and let it rest while you make the glaze.
Step 4: Make the Apple Cider Honey Glaze
This is where things get good.
Lower the skillet to medium heat.
Add:
Apple cider
Honey
Coconut aminos
Apple cider vinegar
Garlic
Thyme
Ginger
Use a wooden spoon to scrape up all those browned bits left behind from cooking the chicken.
That's flavor.
Bring the mixture to a gentle simmer and let it reduce for approximately 5β7 minutes.
You want the apple cider to concentrate and the glaze to become slightly syrupy.
If you'd like it stickier, mix the tapioca starch with cold water and slowly whisk the slurry into the simmering sauce.
Cook for another minute.
Step 5: Bring the Chicken Back
Return the chicken to the skillet.
Turn each piece several times until it's coated in that glossy apple cider glaze.
Let everything simmer together for another minute or two.
Spoon some of that extra sauce over the top.
At this point, your kitchen should smell pretty incredible.

Here's our usual strategy:
Don't build the plate for them.
Put the components out separately.
Chicken.
Sweet potatoes.
Apple slaw.
Extra sliced apples.
Maybe some sauce on the side.
A kid who isn't interested in cabbage might happily eat chicken, sweet potatoes, and apple slices.
That's still essentially the same dinner.
And sometimes letting kids decide whether the sauce goes on the chicken or becomes a dipping sauce makes all the difference.
Meal Prep Tips
This recipe works incredibly well for meal prep.
Make the chicken and sweet potatoes ahead and store them together.
Keep the apple slaw in a separate container.
When it's time to eat, heat the chicken and potatoes and add the slaw cold.
The glaze can also be made ahead and stored in the refrigerator for several days.
And if you're cooking anyway?
Make extra chicken.
Slice the leftovers the next day and serve them over greens with apple slaw, avocado, and a drizzle of the leftover cider glaze.
