Instead of the usual ketchup and mustard situation, we’re topping them with a cool, creamy dairy-free tzatziki made with cucumber, lemon, dill, and coconut yogurt.

And because every good burger deserves a great side, we're serving them with crispy lemon garlic potatoes.

  • 1½ pounds ground turkey

  • 2 cloves garlic, minced

  • 2 tablespoons finely chopped fresh parsley

  • 1 tablespoon finely chopped fresh dill

  • 1 teaspoon dried oregano

  • Zest of 1 lemon

  • 1 tablespoon olive oil

  • 1 teaspoon sea salt

  • ½ teaspoon black pepper, optional

🥒 Creamy Dairy-Free Tzatziki

  • ¾ cup unsweetened plain coconut yogurt

  • ½ English cucumber, grated

  • 1½ pounds baby gold potatoes

  • 2 tablespoons avocado or olive oil

  • Juice of ½ lemon

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • ¾ teaspoon sea salt

  • ¼ teaspoon black pepper, optional

  • Fresh parsley for finishing

Step 1: Get the Potatoes Going

Preheat your oven to 425°F.

Cut the baby potatoes into halves or quarters so they're roughly the same size.

Add them to a large bowl with the oil, garlic, oregano, salt, and pepper.

We're going to save most of the lemon juice for later.

This is important because adding too much liquid before roasting can make it harder for the potatoes to get crispy.

Spread the potatoes onto a sheet pan in a single layer, cut-side down when possible.

Roast for approximately 25–30 minutes, flipping once, until golden brown and crispy around the edges.

As soon as they come out of the oven, squeeze fresh lemon juice over the hot potatoes and finish with chopped parsley.

Step 2: Make the Tzatziki

While the potatoes are roasting, grate the cucumber.

Then grab a clean kitchen towel or several paper towels and squeeze out as much moisture as possible.

Combine the cucumber with:

Add the ground turkey to a large bowl.

Add the garlic, parsley, dill, oregano, lemon zest, olive oil, salt, and pepper.

Now gently mix everything together.

The key word is gently.

Overworking ground turkey can create a dense, tough burger.

Mix just until the seasonings are evenly distributed.

Divide into four equal portions and shape into patties slightly wider than your buns.

Make a small indentation in the center of each patty with your thumb. This helps the burgers cook more evenly and prevents them from puffing up in the middle.

Step 4: Grill

Preheat your grill or grill pan to medium-high heat.

Lightly oil the grates.

Grill the turkey burgers for approximately 5–6 minutes per side, depending on thickness.

Turkey needs to reach an internal temperature of 165°F.

Once they're done, let them rest for a few minutes before assembling.

Now comes the good part.

Toast your gluten-free buns if you'd like.

Add some greens.
