Ingredients
For the Chicken
1½ pounds boneless, skinless chicken thighs or chicken breast, cut into bite-sized pieces
1 tablespoon avocado oil
½ teaspoon sea salt
½ teaspoon garlic powder
For the Sticky Apricot Ginger Sauce
½ cup apricot preserves
¼ cup coconut aminos
2 tablespoons fresh lime juice
1 tablespoon rice vinegar
1 tablespoon freshly grated ginger
2 cloves garlic, minced
1 teaspoon toasted sesame oil, optional
Quick tip: Check the ingredient list on your apricot preserves. Look for one with simple ingredients and less added sugar when possible.
For the Cucumber-Carrot Slaw
1 large cucumber, thinly sliced or diced
1 cup shredded carrots
2 tablespoons fresh lime juice
1 tablespoon rice vinegar
1 teaspoon honey
Pinch of sea salt
For the Bowls
3 cups cooked jasmine rice
Fresh cilantro
Sliced green onions
Lime wedges
Sliced avocado, optional
Step 1: Start With the Slaw
I like to make the slaw first because it gets better after sitting for a few minutes.
Add the cucumber and shredded carrots to a bowl.
Pour in the lime juice, rice vinegar, honey, and a small pinch of sea salt.
Give everything a good toss and place it in the refrigerator while you make the chicken.
We aren't trying to make a heavy coleslaw here.
Think cold, crisp, and refreshing.
Those bright flavors are going to be important once we add the sweet and sticky chicken.
Step 2: Mix the Apricot Ginger Sauce
In a small bowl, whisk together:
Apricot preserves
Coconut aminos
Lime juice
Rice vinegar
Fresh ginger
Garlic
Sesame oil, if using
Taste it.
You should get sweetness first, followed by the savory coconut aminos, fresh ginger, garlic, and a little acidity from the lime and vinegar.
Set it aside while you cook the chicken.
Step 3: Get Some Color on the Chicken
Heat the avocado oil in a large skillet over medium-high heat.
Season the chicken with sea salt and garlic powder.
Once the skillet is hot, add the chicken in an even layer.
Here's the important part:
Don't immediately start moving it around.
Give the chicken a chance to make contact with the hot pan and develop some color.
Cook for about 6–8 minutes, stirring occasionally, until browned and cooked through.
If your skillet is small, cook the chicken in two batches rather than overcrowding the pan.
That little bit of caramelization makes a big difference in the finished dish.
Step 4: Make It Sticky
Now for the good part.
Reduce the heat to medium-low and pour the apricot ginger sauce directly over the chicken.
Toss until every piece is coated.
Let everything gently simmer for another 2–4 minutes.
As the sauce reduces, it will start clinging to the chicken and develop that beautiful glossy finish.
If your sauce gets a little too thick, add a tablespoon or two of water.
If it's too thin, give it another minute to reduce.
You're looking for a sauce that coats the chicken instead of pooling at the bottom of the pan.
Step 5: Build Your Bowl
Start with warm jasmine rice.
Add a generous helping of sticky apricot ginger chicken.
Then add the cold cucumber-carrot slaw.
Finish it however you like:
